Grapefruit & Fennel Salad

You know it’s winter when your Sunday involves the Seattle Jingle Bell 5K Dash, a celebratory brunch featuring a delicious grapefruit and fennel salad, and great friends!

I had never known of such a yummy combination but am definitely going to be making this for my family come Christmas morning! Below is the closest recipe I could find online, looks pretty close to what my friend made. I might be a bit more adventurous and throw some pear in there too – !

Fennel & Grapefruit Salad

  • 1 large red grapefruit
  • 1/3 cup fresh orange juice
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • Salt and freshly ground pepper
  • 2 large fennel bulbs, cored and very thinly sliced on a mandoline
  • 1 small red onion, thinly sliced
