Fennel Me Do

There really is nothing more Pacific Northwest then having salmon for dinner in the summer.

Tonight I embraced my PNW roots and cooked a salmon dinner for Michael and I. It all stemmed after hearing from my brother last night about his new salmon cooking method (yep, in Seattle we have methods of cooking salmon) and then I saw a great price on a huge amount of fish at Costco so I decided… yep, salmon it is!

I turned to a Real Simple recipe for the salmon that paired it with fennel – a very summery root vegetable. Fennel is such a mysterious ingredient and one that I want to get more familiar, so all together tonights dinner seemed very serendipitous.

The recipe calls that you roast sliced fennel root, garlic and lemons in the oven for 8 minutes, then add the salmon. Bake for 12 more minutes and dinner served. Really, that easy and even more delicious than you would think. 

I added an arugula salad with a dressing of equal parts goat cheese and olive oil. 

Voila – dinner served! 

(And, P.S. I know it was extra delicious as Michael told me “I am a lucky guy tonight” as I put the plate down in front of him.)
