Spilt Pea Turkey Soup

So I might have gone too far this time in an effort to reuse leftover Thanksgiving turkey. Now, typically leftover turkey is transformed into delicious turkey sandwiches, savory turkey pot pie, or even turkey soup. Well, not so in my case and the jury is still out if it was a good or bad idea to stray from the usual. 

Looking through my cupboards I saw that I had a bag of split peas and the light went off – rather than ham, I’d use turkey! Yep, split pea turkey soup!

Using this simple crock-pot recipe, I threw everything in the pot and came back five hours later to try the soup.

Amazingly, it’s not that bad. However, it’s not that good either. But it was a great experiment.

Hope you all had a very happy Thanksgiving! Enjoy those leftovers – just not maybe as split pea turkey soup! 🙂
